Brussels Sprouts Salad with Dijon Dressing

Prep Notes

First is try making it the day prior to serving. This is one of the few veggie recipes that does better with a little time.

The other tip is to slice the Brussels sprouts as thinly as you can.


1 tbsp extra-virgin olive oil

  • 1 tbsp apple cider vinegar
  • 1/4 tsp Dijon mustard
  • 1/4 tsp freshly ground black pepper
  • 1/8 tsp kosher salt
  • 3 cups baby salad greens
  • 1 cup very thinly sliced fresh Brussels sprouts
  • 1/2 cup halved grape tomatoes
  • 1/4 green apple

  • Directions

    1. Combine oil, vinegar, mustard, pepper, and salt in a medium bowl, stirring with a whisk.
    2. Add greens, Brussels sprouts, apple, and tomatoes.
    3. Toss and enjoy!
