Chocolate-Cheery Power Bites

Experiment with using other nuts, seeds and dried fruits to find your favorite combination!




1½ cups Medjool dates, pitted
1-2 tablespoon coconut oil
⅓ cup unsweetened cocoa powder (or raw cacao powder)
⅓ cup flax meal (or ground flax seeds)
½ teaspoon vanilla
Pinch of salt
½ cup raw unsalted almonds
½ cup raw unsalted pecans
½ cup dried cherries, no sugar added


1.) Place the pitted dates in a food processor and puree until smooth. Add the coconut oil to help it turn into a paste.

2.) Add the remaining ingredients and process until the nuts reach the desired texture. Scoop and shape into balls and serve. Store extras in the refrigerator.


These Chocolate-Cherry Power Bites remind me of a nutty, chocolaty truffle that bursts of cherry flavor, and they only take a few minutes to whip up. Because they freeze well, I like to keep a stash on hand for those random chocolate cravings. Give them a try and let me know what you think.
